With them and with me, there was also starred chef Cristina Bowerman, who will soon open in Rome a pizzeria for her new Romeo, and Roberto Restelli, ex director of the Red Guide. The result was a very pleasant and significant debate, of which we spoke here, showing the maturity of the pizza sector.
Finding out that in 1962 the French guide had already given a star to pizzeria Negri in Pontecagnano in the province of Salerno aroused astonishment.
The incredible thing is that the current owners, great-grandchildren of the founder, didn’t even know. Yet the serious issue is finding out that the Michelin had taken such an important step over half a century ago, only to deny it right away and basically forgetting about it even now.
Of all that was said, I’ve framed Restelli’s divination: «If a star will soon arrive, it will not be for just one restaurant, or for more than one, but it will be a prize for an entire sector».
I hope this will be the case, and that no one of those who might be awarded will lose their minds, as many of their chef colleagues have.
