South Italy. And South America. For Luca Doro, distance turns into proximity and diversity into new and tasty opportunities...
Thus, the star of Macerata Campania - the Caserta town of the Sant'Antuono Festival and the Battuglie di Pastellessa - makes Tamal Pizza, a tribute to his Campania region and to Colombia, his wife Monica's homeland.
'I prepare a dough with Petra 0102 HP flour and pass it through the Ottimais, to obtain a sort of breadcrumbs. Then I bake it in the iron pan. For the filling I use chorizo, Caserta saffron from Masseria del Sesto in Pietravairano, caciocavallo cheese from the Colombian sheep I have adopted, and tamales, made with corn, chicken, carrots, peas. In the Amazon they steam them, often wrapped in plantain or banana leaves,' says Luca. His pizza narrates different universes yet is capable of meeting and contaminating each other.
Including, connecting, sharing. These are verbs loved by Luca (along with the slang word #cstamm). Luca, who in his pizzeria Doro Gourmet also makes arepas and empanadas with meat, cheese and guacamole; and also papas rellenas with Taburno buried potatoes. He uses these to make crocchè as well. Luca imagines and creates Luca with a glocal perspective, without stereotypes and taboos but with humanity, generosity and altruism. Just think of his many adoptions: olive groves, some land in the Alto Casertano area, Querciolaia di Caiazzo chickens (with their eggs he created Doro Pan, a very personal pandoro in limited edition). But there’s more. Luca joined an initiative called Un Pizzaiolo per Amico (A Pizzaiolo for Friend), in partnership with non-profit organisation #micolorodiblu, supported by the Autism Division of the NeapoliSanit rehabilitation centre in Ottaviano.
‘We have equipped an educational area. Of course, some people can work and some can't. It depends. But everyone feels involved. Some jump in as soon as they see the flour. For them it represents a moment of happiness,’ he reveals. He’s on the front line to raise awareness, inform and teach. Even to those who suffer from this type of behavioural disorder.
‘And we are running another project, with the Multipurpose Day Centre in Santa Maria Capua Vetere. It’s a community for teenagers. They have committed petty crimes, but have already served their sentence in the juvenile justice centre and are now following a path to enter the job market. Our mission is to rehabilitate them and reinstate them into society.’
Meanwhile, Luca thinks of Friuli. Certainly, of Cervignano del Friuli, in the province of Udine. Here, in the spring, he’ll open his second restaurant: Impronta Doro.
‘The logo will show my hand with the writing on it. A dynamic and vibrant space that will coexist with a bakery. ‘We will also bake pizza in a pan, bread and biscuits. We will make music and try to make connections with the worlds of art, fashion, comics. Putting into practice what we learnt in the latest edition of PizzaUp in Milan. It will also become a destination pizzeria,' comments Doro.
