As Stefano Cavallito and Alessandro Lamacchia write in the 2023 Identità Golose Guide: 'One high, one low, one soft, one crispy, one long, one short, one stuffed, one topped. It's a menu to get lost in, to close the menu and say: 'your pick'. For sure, whichever of the dozens of combinations of textures and flavours is served will be a sensorial surprise'.
There are three establishments celebrating this approach to pizza: the first is called Gusto Divino, it is the most historic and is located in Saluzzo, a town in the province of Cuneo, from where Prete's professional journey as a pizzaiolo began. Or rather, as he likes to define himself, as a 'leavening expert'. An expert in leavening who is always able to find new solutions to make his doughs lighter, more digestible, crispier (or fluffier...) and tastier.
The second place is in Turin. Its name is Sestogusto and its first location is at number 31 Via Mazzini, in the heart of Borgo Nuovo. The third is even more central, at Via Stampatori 6, and is the novelty on which Massimiliano Prete has been working recently, opening in December 2022.
'A new opening is always a bit traumatic for me, a sort of delivery, because I am a perfectionist,' he says with a smile. My motto is also written on the Sestogusto sign: patience, precision, poetry'...
