The annual appointment at PizzaUp (in Milan on the 6th and 7th of November) will offer a valuable opportunity to discuss this together with the pizzaioli who will participate with their usual enthusiasm to draw together the future of their sector and, above all, push the boundaries of the knowledge of ingredients and techniques while raising quality standards.
The programme of PizzaUp 2023 is built on two cornerstones: the focus on contemporary pizzerias and the clear definition of the value and experiential traits that gratify the most conscious consumers, who do not stop at ranking positions to express a judgement of quality. The programme will develop the four styles of contemporary pizzerias (Tasting, Neoclassical, Territorial and Collective) and will illustrate the added value of emotions in the consumption experience in pizzerias, with the economic and marketing techniques underlying them, to propose an 'economy of emotions' as an antidote to the torpor of consumption induced by the resurgence of inflation.
After all, at a time of market slowdown such as the one we are currently experiencing, identifying the product standard without improvising too much and redefining company management and forms of communication are mandatory steps to face the shock wave of inflation and the consequent reduction in consumption.
