His Marinara is a triumph of tomatoes - there are four types - whose taste is further characterised by the different techniques used: sweet cream, fresh Piennolo, smoked San Marzano, the texture of a semi-dry. All bound together by the fermented black garlic sauce, a warm, intense note of 'rustic' umami. A complete bite: juicy, meaty, fragrant, tasty.
A symbol of that simplicity so complex to pursue, but which always proves to be the winning choice.
