New York and Matthew Kenney’s vegan pizza

My readers, knowing my work a little, know I deeply admire the work of Matthew Kenney, American vegan and raw food chef, capable of appealing even to non-vegans.

Light years apart from the sadness in which it is easy to trip into, his world a few months ago acquired a new element. A revolution for him.

Kenney discovered fire, while keeping far away from any animal element. Perhaps some day somebody will present a raw pizza. Till them, it simply doesn’t exist as it’s not possible.

00 and Co is a vegan pizzeria opened in February in the East Village in New York, 65 2nd Avenue, between the Second and the Fourth Street, tel. 001.212.7771608.

As Barbara Guerra wrote in a nice article you can read here, the wood oven reminds one of the type used for bread. The «pizzas will be memorable thanks to their toppings. The fat part is made of vegetal cheese and by many vegetables wisely used and paired so that each mouthful is pleasant and rich of character. In some it’s fun how it chases traditional pizza flavours such as mozzarella, sausage, anchovies. While you try to find out if the trick was successful, new sensations explode in your mouth and pleasantly tickle your taste buds».

The Tomato basil cashew mozzarella, in the photo, is a valid vegan interpretation of our margherita, where the cashew mozzarella is a sort of stracciatella made with cashew nuts, while the Grilled trumpet mushroom, walnut cream, green harissa, lemon, is an excellent interpretation of pizza boscaiola.

One final note: the 00 in the sign is a double zero, not a double O. The numbers were chosen precisely and intentionally so as to enhance the choice of 00 flour «which is ideal for pizza dough for three reasons», listed in the menu.

No doubt. However, were I in Kenney’s shoes, I’d widen my horizons to include other types of flour as well.
