2012 - The Birth of the Manifesto

On November 7th, 2012, on the occasion of the seventh edition of PizzaUp^® in Vighizzolo d'Este, Chiara Quaglia and Piero Gabrieli, together with eight of the most accredited exponents of Italian journalism and gastronomic criticism, opened a debate on the future of Italian pizza and with them formulated the 10 points of the Manifesto della Pizza Italiana Contemporanea, signing them with the 80 pizza makers present at the symposium.

A new movement was born in the world of pizza, hinged on 10 intentions of qualitative and cultural growth of pizza makers, without the reins of a tradition that excluded creativity, inspired by the revolution of years before by Simone Padoan (I Tigli in San Bonifacio - Verona) and synthesis of the work of 5 years of Università della Pizza^® that had produced the Manuale della Pizzeria Dinamica^® (Manual of the Dynamic Pizzeria^®), then freshly printed.
